Raspberry Dream Bars!
I love sweets, but this cookie bar takes the cake...uh, cookie. Whatever, you know what I mean! It's dreamy, light, and perfect to take to a new mom, a potluck, or serve at a party! This recipe has been in my family for as long as I can remember. I can't make them unless I know lots of people will be around to eat them. No self-control with these delicious Raspberry Dream Bars! Enjoy!
What You Will Need:
1 Cup Butter, Softened
1 Cup Sugar
1 Egg
2 Cups All Purpose Flour
2/3 Cup Raspberry (or Apricot) Jam
What You Will Need For The Topping:
¼ Cup Melted Butter
1 ½ Cups Flaked Coconut
2 Eggs
1 Teaspoon Sugar
Putting It All Together:
Pre heat the oven to 350 degrees F. In a large bowl for your mixer, cream together the butter and sugar until light and fluffy. Add egg and beat until well mixed. Stir in the flour. Pat the dough into a 13 X 9 inch pan. Spread jam evenly over the top. In a small bowl, combine the topping ingredients. Carefully spread over the jam. Bake for 25 minutes. Cool in pan on wire rack. Cut into 2 X 1 inch bars. Makes 4 ½ dozen bars at about 105 calories each.
