Puff Pancake-An Easy Family and Crowd Pleaser!
I bet you have a family recipe that immediately transports you back to a place and time. For me, it’s a Puff Pancake. In our home growing up, it was the best breakfast a kid could wake up to-warm, hearty, sweet, and delicious! It has a light and fluffy texture with a perfectly golden crusty bottom. Heaven.
The best kept secret was how easy it is to make. It looks so impressive that I always thought it must be hard to put together, but it’s actually easier than anything else I make on a regular basis.
And my boys LOVE it-I get to pass this traditional weekend treat on to my kids now-and to YOU! Make it for a lazy Saturday at home or for a quick breakfast when you have guests over. But don’t blame me when your family asks you to make it every day!
WHAT YOU WILL NEED: (you can cut this recipe in half and bake it in a pie plate instead)
4 Tablespoons Butter
4 Eggs
1 Cup All-Purpose Flour
1 Cup Milk
½ Teaspoon Salt
½ Teaspoon Vanilla (optional)
3 Cups Assorted Berries
1 Teaspoon Sugar
Powdered Sugar For Dusting Over The Pancake
Lemon Wedges
Maple Syrup
9X13 Oven Safe Baking Dish
PUTTING IT ALL TOGETHER:
Preheat oven to 400 degrees. Place butter in 9X13 baking dish and put it in the hot oven until melted. Brush the butter up the sides of the dish to coat it.
In a medium bowl, beat eggs slightly and then beat in the flour, milk, salt, and vanilla. Do not over beat. Pour into hot baking dish. Bake for 25 to 30 minutes until golden and puffy.
Meanwhile, add sugar to berries and let rest so the flavors blend together.
Remove pancake and serve immediately. Sift powdered sugar over the top, and serve with the berries, lemon wedges, and/or syrup!
