Recipe: Energizing Banana Bread
There’s something about banana bread that feels nostalgic and special. It’s Mom after school, setting a loaf on the windowsill to cool, then slicing a piece and setting it on a seasonal napkin for you to snack on while you finish your homework. In recent years, I’ve committed to finding healthier versions of my favorite recipes for my own kids than the ones I used to eat growing up. This Energizing Banana Bread is one of them!
As parents, we can feel good about fueling our children's bodies nutritiously without skimping on flavor — or those “feel good” memories we had as kids! I hope you enjoy it as much as we do!
Ingredients:
⅔ cup dairy-free milk
3 bananas (mashed)
2 ¼ cups oats
½ cup walnuts
1 tbsp baking soda
chocolate chips OR blueberries (optional)
How I Make It:
Preheat oven to 360 degrees (F)
Mix all ingredients except oats
Add oats to a blender and pulse until it’s a fine oat flour
Add oat flour gradually to the mixture and stir well
Pour into a loaf pan and back for approximately 1 hour
